What's the better part of a fish?
I suppose it's the belly, though I never put much thought into it before. I've also never prepared a fish myself, unless you count slicing pieces off of smoked salmon.
Fish comes to me either in fillets or in small pieces atop sushi rice. I have no idea what part of the fish I'm eating, except that it is yummy.
I think the difference is that you usually cut open the belly and expose the meat, while the back remains covered by skin. Pay attention the next time you eat an entire fish, there really is a detectable difference.
Tuna = Belly.
All other fish = Filet.
I thought this would be a choice between where I prefer to be rubbed.
Sigh.
