Fruity Quinoa Salad
Jones Family Favorite

  • 1/2 cup slivered almonds
  • 2 oranges
  • 2 cups cooked quinoa
  • 1/2 cup cooked green bell pepper
  • 3/4 cup minced onion
  • 1 tablespoon oil
  • 3 tablespoons orange juice
  • 1 teaspoon cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon mustard
  • lettuce leaves, optional

Toast almonds in a small dry skillet and set aside. Grate 1 tablespoon orange zest. Peel the rind and the bitter white membrane beneath it. Cut oranges in a shallow dish in 1/4-inch slices, reserving accumulating juice; add additional orange juice to equal 3 tablespoons. Toss quinoa, green pepper, onion and almonds in a large bowl. Seperately, combine oil, orange juice, vinegar, honey, mustard, orange slices and rind. Toss with quinoa. Line plates or serving bowl with lettuce leaves, then top with salad. Serves 4-6.

To Prepare Quinoa
Peruvian, pronounced keen-wah, Incan mother grain.

  • 1 cup black or white quinoa
  • 1 1/2 cup water

Put the quinoa into a fine strainer and run water through it until the water is clear and no longer sudsy to remove bitter saphonins. If you don't have a fine strainer, rinse the quinoa in bowl filled with water, and then pour it through a clean dishtowel. Prepackaged quinoa has usually been polished and pre-rinsed, but relying on preprocessing is risky.

Boil water. Add wet quinoa, simmer uncovered 12 minutes for white quinoa, 15 minutes for black. Quinoa is fully cooked when the germ has separated from the grain. It looks like a small white "C" shape surrounding each grain. If any excess liquid remains, pour it off and raise the head to quickly boil off the rest.
