Sugar and Spice Yam Muffins

This was my favorite baked good that my mom made when I was growing up. The recipe is (apparently) from Marlene Sorosky's Holiday Cookbook.

Ingredients:

1 stick softened butter
1 cup sugar
1 1/4 cups cooked yams
2 large eggs
1 1/4 cup milk
1 tsp lemon extract
2 1/2 cups AP flour
1 1/2 tbl baking powder
3/4 tsp nutmeg
1/2 tsp salt
1 heaping tsp cinnamon
1/2 c chopped pecans

1/4 cup sugar mixed with 1 T cinnamon for topping.

Directions:

Preheat oven to 400
Cream butter and sugar, beat in yams.
Add eggs one at a time beating well after each addition
Mix in milk and lemon extract
Combine flour, baking powder, nutmeg, salt, and cinnamon.
Combine wet and dry ingredients until just combined. Be careful not to over mix.
Fold in nuts.

Grease 24 muffin tins or line with muffin cups. Fill to about 3/4 full and sprinkle cinnamon sugar mixture on top. Bake at 400 for 20 to 25 minutes or until a toothpick comes out clean. Turn out and allow to cool. Serve warm with butter alongside dinner (or as an in between meal snack.)
