    Default How do they get French set yoghurts to set?

    It's my understanding that French set yoghurts, when made at home, are made by culturing the yoghurt in the container in which it will be served (is my understanding correct?). However, this cannot be true of commercial yoghurts, though, can it? Do they add something to make the yoghurt set, or do they really culture the yoghurt in the individual pots?

    Some of them add carrageenan, but I don't think that's true of all.

    I've made yoghurt at home a few times - it tends to set all by itself. If you stir it so as to give it a smooth texture, it continues to culture and it will set again (not straight away - overnight) - I think the question should actually be: How do they stop the other kinds of yoghurts from setting?
