    Default Hot pepper lovers, help me identify these dried chiles!

    I went to a hispanic market yesterday and it was like I was in Willy Wonka's Chocolate Factory—there was so much to see and try and I wanted one of everything and I lost my mind. I bought several varieties of dried chiles, and when I got home, I realized that two of them looked very similar, and I couldn't remember what they were to save my life. I remember that several varieties of pasillas were available (mulatto, negro) but I probably wouldn't have bought 2 pasillas.

    Here's a picture.

    This is what I know: the one on the right smells smoky and sweet. The one on the left doesn't smell smoky—just clean and a little sweet. The farmer's market is a bit of a drive and it's not like these people have a phone number to call, so I gotta try to solve this at home before making this trip again!

    Any ideas?

    ETA: which is a subtype of dried poblano related to the mulato. I think. I never could get that clear. They taste great though!

    To clarify- each of the pictured chiles came from a different bin at this market.

    If I had to guess, I'd say the smoky one = ancho, the sweet one = mulato or similar.

    I agree. They both look like dried poblanos of some sort, which anchos and mulatos are. Anchos tend to smell a little smoky, and mulatos are usually softer and sweeter.

    Update: I found an ancho I still had in my pantry, and it was very similar in size and smell as the one pictured on the right, so I think I have that one solved.

    Perusing this page, if one’s ancho, the other looks closest to mulato.
