Anyone got a good one? Bonus points if it's a crockpot recipe!

    Simple but delicious veggie soup.

A couple of large onions, some celery, some potatoes, a knorr vegetable stockpot (or two)*

Chop onions, brown in a frying pan with a little bit of olive oil.

Bring a couple of litres (approx.) of water to boil, add stockpots, and then the browned chopped onions.

    Chop celery and add.

    Chop potatoes and add.

Stir. Add more water if you think necessary.

Leave for circa 30 to 40 minutes on a highish temperature.

If you'd prefer it smooth you could use a handblender, I usually just have it chunky so it's almost like a stew. You probably won't need to add salt as the stock is salty enough but you might add pepper or other spices to give it more of a kick.

Serve with generously buttered, crusty bread.

*I'm sure other vegetable stock cubes would be ok too but these are the more delicious ones I've found.

No recipe, but Heinz have come out with these "Squeeze and Stir" Cup a Soups in the UK that are delicious. Damn them.
