    Default Anyone have a good no-bean chili recipe?

    We're going to a chili potluck this weekend, and I've been charged with bringing some with no beans. Anyone have a good recipe they could share?

    Beans are little more than a filler. Almost any recipe will do if you put in a little more meat in place of the beans.

    I haven't tried them, but I'm thinking that the championship recipes of the International Chili Society are a good place to go for inspiration. I understand that they are firmly of the opinion that if you know beans about chili, you know that chili has no beans.

    Good point, kk fusion, I just am not an experienced chili maker in general! Thanks, Rube. I tend to agree with the ICS, I'm not a fan of the beans, either.

    Chili with no beans is my faaaavorite. I made some good stuff once, but I don't have or remember the recipe.

    As I recell, I sauteed dried ancho chiles and then cooked the meat in that oil. Beyond that, the memory gets fuzzy.

    Clearly you know some right-thinking people who understand that beans have no place in proper chili.

    3 tbsp. olive oil
    .... coat bottom of large stock pot
    1 1/2 lbs. cubed flank steak
    .... Brown in skillet (salt and black pepper to taste) and place in stock pot
    1 1/2 lbs. ground beef (no more than 80% lean)
    1 med. white onion and 1 med. red onion
    1ea. lg. red, yellow and green bell pepper
    1 lg. clove garlic
    .... chop white onion, smash and chop garlic and chop half of each pepper and sweat with ground beef (salt and black pepper to taste) add to stock pot
    .... slice red onion into thick half rings dice other half of peppers into large cubes (3/8in. or so) add to stock pot
    1 large can whole pealed tomatoes
    .... crush each tomato in your hand in the stock pot add remaining juice and turn on to med heat stir pot regularly
    6 slices thick cut bacon
    .... cut into 1/2 in. pc. add to pot raw (break apart pieces so they don't cook together)
    1 stalk celery
    4 med carrots
    .... use favorite method to reduce celery and carrots to a pulp add to pot
    2 cilantro peppers
    4 jalapeno peppers
    .... skin and chop add to pot (for extra heat don't skin and add seeds to pot)
    6 tbsp. chili powder
    4 tbsp. oregano
    2 tbsp. basil
    2 tbsp. granulated garlic
    1 tbsp. cilantro
    2 tsp. ground cumin
    2 tsp. thyme
    1 tsp. ground mustard
    1 tsp. whole dill seed
    1/2 tsp. turmeric
    .... add to pot wile stirring

    Reduce heat to a simmer, stir occasionally, add beer or water as needed, cook at least 2 hours.
    Remove from heat let stand 1 hour and place entire pot in 'fridge over night.
    Freeze in serving size containers or reheat and serve.
    Serve with cornbread and ice cold buttermilk.
