    Gouda is way up there for me, but I think my absolute fave is gruyere.

    Although I'm partial to Danish Blue and Stilton, I love soft cheese like Brie and Camembert

    Smoked gouda, baked brie, aged cheddar.

    I must not be very cultured, because I only very recently enjoyed for the first time some very, very aged cheddar. It was sliced super thin, and was almost crunchy in texture. The cheese was served with unsalted water crackers and a very yummy, very sweet chutney. Really quite fabulous.

    Also fun!

    We live near Wisconsin, a land packed with cheese shops. String cheese is a delight, as is smoked mozzarella. Dill halvarti is another Wisconsin cheese-shop product my family enjoys.

    I have no favorite cheese, as I adore tons of them in their own unique way. Brie is one, as are Gruyere, Emmentaler, Camembert, mascarpone, ricotta and smoked mozzarella.
    So now they are just dirt-covered English people in fur pelts with credit cards.

    I love goat cheese...like those appetizers some restaurants have that are a mound of goat cheese, surrounded by tomato sauce, and sliced Italian bread to spread it on.

    For a snack at home, sliced swiss on crackers can't be beat.

    But I'm not fussy, I like all kinds of cheese, except bleu.

    You people are weird. Bleu cheese is the best for salads. Spinach + dried cranberries + bleu cheese + toasted nuts + raspberry vinegrette = BEST SALAD EVER.

    Oh mah gawd YES. I particularly enjoy that combination with some grilled chicken sliced up and added. It might actually make you die of joy.

    Let's see... I really can't think of any cheese I've tried that I haven't liked. And that includes limburger.


    Different cheeses for different things of course. For the most part I really go wild for the more pedestrian cheeses

    I really love a good extra sharp cheddar. I can't think of a better grilled cheese sammich than one with white extra sharp cheddar, a thin slice of onion and several slices of avocado, all on fresh sourdough. *bliss* There are times that I want to have a simple brie. Then there's cream cheese and the ways it can be used. Mozzarella. And various blended Montery Jack cheeses.
